Confit of mandarin zests with a thick texture, easy to dose with spoon. Packed in 500 g oxygen-barrier pouches.

Madeleines
1. Melt the butter in saucepan, let it cool down.
2. Whisk the eggs, milk, sugar, honey, citrus confit in a bowl A
3. Add butter to the mixture (A)
4. Prepare a mixing bowl, sift in the cake flour & baking powder and mix
5. Pour in the batter A to mixing bowl until you get a homogenous batter.
6. Grease the molds with butter and coat with a thin layer of flour.
7. Pipe the batter into the madeleine mold.

Fourrage
8. Pipe 1-2g extra confit mandarin/orange zest on top of the batter in the mold
9. Bake at 180°C for 9~10mins (Pre-heat to 200°C)
Optional decoration: Glaze or Pipe extra Citrus Zest Confit

How to store: Store in air-tight container and store at room temp up to 4~5 days.
