Ingredients

Carrot Cake

Almond powder: 205 g
Caster sugar: 205 g
Eggs: 205 g
Butter: 108 g
Rice flour: 27 g
Grated carrots: 155 g

Syrup

Carrot juice: 540 g
Water: 260 g

Mandarin confit

Mandarin Purée 100%: 100 g
Glucose: 18 g
Sugar: 18 g
NH Pectin 325: 1.6 g
Baby carrots (whole): 14 pcs
Water: 500 g
Sugar: 300 g

100% mandarin orange puree

Andros Chef mandarin orange puree 100% has a light orange colour and a natural sweetened taste thanks to its Sicilian mandarin oranges. Used for beverages and sorbets, it had a light sour touch to desserts. Packed in a 1kg tub.

Preparation steps

1. Carrot Cake

Mix the almond powder and caster sugar together. Gradually add the eggs, followed by the rice flour and the lukewarm melted butter. Finally, fold in the grated carrots until evenly incorporated. Scale 65 g of batter into each mould and bake at 160°C (320°F) for 20 minutes. Once baked and cooled, soak the carrot cakes in cold syrup, then allow them to drain before use.

2. Syrup

Bring the water and carrot juice to a boil.

3. Mandarin confit

Bring the mandarin purée and glucose to a boil. Combine the sugar with the pectin, then whisk into the hot mixture. Return to a boil and cook briefly until fully incorporated. Deposit 10 g of the mandarin insert into each carrot cake. Cook the carrots in the syrup for approximately 8 minutes, then drain before use.
