Harvested at optimum ripeness, the fruit is transformed into a sweetened puree featuring a vibrant colour, a thick, almost creamy texture, and the intense flavour of ripe mango. Highly appreciated by professionals, it brings indulgence and roundness to desserts, beverages and culinary creations, pairing beautifully with passion fruit, ginger, caramel and white chocolate.

Preparation steps

1. Sweet pastry

Cream the butter, caster sugar and salt until smooth and homogeneous. Add the almond powder, followed by the egg, and mix until fully incorporated. Add the flour and mix briefly until a smooth dough forms, taking care not to overwork it. Roll the dough to a thickness of 2 mm between two sheets of baking paper and chill until firm. Cut pastry discs to fit your tart rings, along with strips 2.5 cm high. Line the previously buttered tart rings with the pastry discs and strips, then trim the edges neatly. Fill with the nectarine almond cream and bake at 160°C (320°F) for approximately 20 minutes, until lightly golden and evenly baked.

2. Almond cream

Prepare the almond cream by vigorously mixing the softened butter, almond powder, caster sugar and whole egg until smooth and homogeneous. Pipe the almond cream halfway up into the tart rings lined with sweet almond pastry, then bake as directed.

3. Mango passion fruit confit

Combine the sugar and pectin while cold. Heat the mango and passion fruit purées to 40°C (104°F). Gradually whisk in the sugar and pectin mixture, then bring to a full boil.Pour into 6 cm diameter half-sphere silicone moulds and freeze until completely set.

4. Mango passion fruit mousse

Soak the gelatine in cold water until softened. Drain well and melt gently. Warm the mango and passion fruit purées, then mix in the melted gelatine until fully dissolved. Whip the cream to a light, airy consistency. Gradually fold the whipped cream into the fruit mixture until smooth and homogeneous.

5. Assembly

Spread 20 g of passion fruit compote into each baked and cooled tartlet shell. Pipe the cream on top and smooth it level with the rim. Unmould the mango-passion fruit confit half-spheres, glaze them with a neutral glaze, then place one in the center of each tartlet. Pipe the mango-passion fruit mousse around the insert.
